CRUST:
1 10-oz. pk. graham crackers
1 egg, beaten
FILLING:
2-1/2 envelopes gelatin
1 C. water
1-1/2 C. sugar
1 C. sour cream
2 pints strawberries, washed and capped
1 lemon, juiced
grated peel of one lemon
pinch salt

CRUST:
Place crackers in blender and chop until very fine. Remove crumbs to bowl and mix thoroughly with egg. Press mixture firmly to sides and bottom of lightly buttered 8" spring form pan making crust 1/4" thick. Bake at 375 degrees 8-10 minutes.
FILLING:
Remove from oven and chill crust in refrigerator.
Soak gelatin in water, then heat until dissolved. Place cheese, sugar, sour cream, berries, lemon juice and peel and salt in blender container and blend until creamy and fluffy.
Blend in dissolved gelatin and mix well.
Turn cheese mixture into chilled crust and chill until firm.
