3 cup uncooked quick-cooking oats
2 cup firmly packed brown sugar
1 cup margarine (softened)
2 eggs
1 tsp baking soda
2 tsp vanilla
1/2 tsp salt
1 1/2 cup flour
1 cup raisins

Directions:
Directions:
Heat oven to 375. Combine all ingredients EXCEPT flour + raisins, in a large bowl. Beat at low speed, scraping bowl often, until well mixed (1-2 mins). Stir in flour + raisins by hand until well mixed.
Drop dough by rounded tablespoon 2 inches apart on lightly greased cookie sheet. Bake for 8-12 minutes or until edges lightly browned. Let stand 1 min, then remove from cookie sheet. Do not overbake, these cookies are supposed to be soft.
