2 1/4 c. flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/3 cup soft shortening
1 c. milk (plus 1/4 to 1/3 c. milk for icing)
1/3 cup + 1/4 cup chunky peanut butter
2 eggs
3 c. confectioner's sugar

Grease and flour 9" layers or 13 x 9" oblong pan. Sift together flour, sugar, baking powder, and salt.
Add: soft shortening, 2/3 cup milk, and 1/3 c. chunky peanut butter. Beat 2 minutes. Add another 1/3 c. milk and 2 eggs. Beat 2 more minutes. Bake at 350 for 25" for cupcakes, 30 - 35" for layers, or 40" for oblong pan.

Peanut Butter Icing:
Stir 1/4 c. chunky peanut butter, 3 c. confectioner's sugar and 1/4 to 1/3 c. milk together until creamy. Will frost 2 - 8 or 9" layers or 13 x 9" oblong.
