1 can (8 oz.) tomato sauce
1/4 c. brown sugar
1/4 c. vinegar
1 tsp. prepared mustard
1 egg, lightly beaten
1 med. onion, minced
1/4 c. cracker crumbs
2 lb. lean ground beef
1 1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Combine tomato sauce, brown sugar, vinegar, and mustard in a small bowl. Set aside.
Combine egg, onion, cracker crumbs, ground beef, salt, and pepper in a mixing bowl. Add 1/2 cup of the tomato mixture and blend thoroughly. Shape into an oval loaf and place in an oblong micro-proof baking dish. Make a depression in top of loaf. Pour remaining tomato sauce over top of meat.
Cook uncovered, on 70 (roast) for 25 to 30 minutes, or until center is cooked. If using temperature probe, insert in centre of meat loaf. Cook on 70 (roast), until the temperature reaches 140 degrees.
Cover meat and let stand about 10 minutes before serving.
