1Tbsp olive oil 1/2 C chopped onion 1/4 C shredded carrots 1 tsp. cumin 1/2 tsp. chili powder salt/pepper to taste 1 11oz can white corn drained 1 16 oz can black beans drained 1 14 oz can chopped tomatoes-the Mexican with chopped chilies-mild or hot 1-2 Tbsp chopped cilantro
Heat oil over medium high heat. Add carrot, cumin, chili powder, salt and pepper. Saute until onion is translucent, 3-5 minutes, Stir in corn, beans, tomatoes and cilantro. Heat through.
This is good used as an accompaniment to tortilla chips and also as a side dish.
