1 1/4 c. oil
2 c. sugar
4 egg whites
2 cups grated carrots
1/2 c. nuts
3 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
pinch of salt

Icing: 1- 6 oz. pkg. cream cheese, 2 c. powdered sugar, 1/2 tsp. vanilla. Add just enough milk to moisten.

Directions:

Mix oil, sugar, eggs, and carrots well. Add flour and rest of ingredients. Pour into tube pan. Bake @ 350 for one hour. Can use loaf pan if desired.
