1 c. rolled oats
1 cup milk (sour or butter)
1/3 c. soft shortening
1/2 cup brown sugar
1 egg
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Soak rolled oats and milk for 1 hour. Mix shortening, brown sugar, and egg thoroughly. Sift together the flour, baking powder, baking soda, and salt, and stir into shortening mixture alternately with the rolled oats and milk mixture. Fill greased muffin cups 2/3 full. Bake at 400 for 20 - 25 minutes or until golden brown. Serve hot. Makes 12 muffins.
