4 medium tomato(es), chopped into 1/2-inch pieces (or 2 pints smaller tomatoes)
1 medium cucumber(s), seedless variety, chopped into 1/2-inch pieces
1/2 medium red onion(s), chopped into 1/2-inch pieces
1 Tbsp lemon zest
1/2 tsp table salt
1/4 tsp black pepper

Directions:

Toss all ingredients together in a large bowl; allow to stand for at least 20 minutes. Yields about 1 cup per serving.
