1 medium tomato, chopped
1/2 medium cucumber, peeled and diced
1 T seasoned rice vinegar
1 T olive oil
pinch each of pepper, salt and sugar
4 whole-wheat pita pockets
1/2 cup prepared hummus
1-1/4 C sliced cooked chicken
4 large lettuce leaves
2 T crumbled feta

Directions:
Directions:
In bowl, combine tomato, cucumber, vinegar, oil, and seasonings. Warm pita breads in toaster oven until puffy, about 1 minute. Spread 2 T hummus inside each pita bread. Divide chicken, lettuce and feta among pitas breads. Fill each pita with 2 T tomato-cucumber mixture.
