3 pkgs. Phyllo dough
2 bags fresh spinach (I used Dole)
3 bunches green onions
2 lbs. ricotta cheese
6 eggs
1 lb. feta cheese
6 sticks butter, melted

Directions:
Directions:
Mix together all above ingredients except the dough. Season with a little salt and pepper.

Unroll Phyllo dough and keep under a clean damp towel so it doesn't dry out. On a platter, place a layer of dough and brush on melted butter. Continue until you have 4 layers. Cut dough into 6 strips. Place spinach filling on end. Roll up in triangles (like you would fold a flag). Continue process until you have used up all of the mix and dough. Bake at 400 degrees for 15-20 minutes until pies are golden brown. These are a big hit at parties.
1/3 of this recipe makes approximately 28 pies. These freeze well.
