5 lbs potatoes, peeled and diced
1 med onion, diced
4 stalks celery, diced
4 hard boiled eggs, diced
1 cup Mayonnaise
Salt and pepper
8-10 Sweet pickles, chopped

Directions:
Directions:
Cook potatoes in a large dutch oven until tender. Let potatoes cool for approx. 30 mins. In a large mixing bowl, mix all ingredients together. Cover and refrigerate 6 hrs or overnight. Stir again, prior to serving. May need to add a little more mayo if refrigerated overnight.
