8 ounce package of rice/soba/wheat noodles
8 ounce package frozen sugar snap peas
1 red bell pepper, thinly sliced
1/2 chopped green onion
1/2 cup fresh basil or mint

Spicy Peanut Sauce:
3 Tbsp fresh lemon juice
21/2 Tbsp brown sugar
2 Tbsp soy sauce
1/2 tsp crushed red pepper flakes
1 - 2 cloves garlic minced
salt to taste
2 Tbsp creamy peanut butter

Cook noodles as directed
Meanwhile, make Spicy Peanut Sauce. In a small saucepan, combine lemon juice, brown sugar, soy sauce, red pepper flakes, garlic and salt; bring to a boil, stir until smooth and set aside. When cooking noodles, quickly cook snap peas (2 minutes in boiling water). Drain noodles and peas, transfer to large serving bowl. Add bell pepper, onions and basil. Pour sauce over noodles; toss to mix and coat.
