1/4 c butter or olive oil
1 shallot, chopped
16 one oz slices of filet mignon
Flour seasoned with Seasoning Salt
4 green onions, chopped
1 c sliced fresh mushrooms
1/2 c Marsala Wine
1 pinch of Italian Seasoning
1 medium tomato chopped
1/4 lemon
1 c beef stock or consommé

Directions:
Directions:
Melt butter in large medium weight aluminum skillet. Add shallots and cook until transparent. Dredge filets in seasoned flour; brown each side quickly. Remove filets from skillet and set aside to keep warm. Add green onion and mushrooms and saute until tender. (Add more butter if needed) Pour in wine and cook, stirring, for about 1 minute or until ingredients absorb the liquid. Add Italian Seasoning and tomato. Squeeze lemon over all. Add stock and cook down half. Add filets and cook until heated through. Season to taste. Serve sauce over meat.
