2/3 c. sugar
3 T. cornstarch
1/2 tsp. salt
3 c. milk
3 egg yolks, slightly beaten
1 T. butter
1 1/2 tsp. vanilla
1 c. shredded coconut (for coconut cream pie) or sliced bananas (for banana cream pie)
1 cooked pie shell
fresh whipped cream

Directions:
Directions:
Mix sugar, cornstarch, and salt in a saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Remove from heat and stir half the hot mixture into the egg yolks. Then add egg yolk mixture to pan. Boil 1 min. more, stirring constantly. Remove pan from heat and blend in butter and vanilla. Add coconut or bananas. Pour into a baked pie shell. Allow to cool completely. Top with whipped cream.
