1 lb linguine
6 tbsp rice vinegar
5 tbsp soy sauce
1/4 c vegetable oil
2 tbsp fresh grated peeled ginger
2 tbsp Chile-garlic sauce
2 tbsp oriental sesame oil
2 1/2 c sliced green scallions
2 cups of diced cooked chicken
1/2 c chopped fresh cilantro

Directions:
Directions:
Cook pasta in large pot of boiling salted water until just tender but still firm to the bite. Drain well.

Whisk together next 6 ingredients in large serving bowl. Add hot pasta,green onions, and chicken. Stir to coat with sauce. Add cilantro and toss to blend.

Sometimes I grill the chicken breasts with a soy marinade before chopping and adding to the noodles.
