Directions:
RICOTTA LEEK STUFFING: In skillet melt butter over medium low heat cooking leeks and garlic, stirring occasionally for about 15 minutes or until soft. Transfer leek mixture to bowl, let cool. Mix in ricotta cheese, Parmesan cheese, parsley, lemon rind and juice, egg white and pepper; set aside.

CHICKEN: Slice horizontally in half, cutting almost through but not all the way, opening as a book.
Spread 1/4 of the leek stuffing evenly over inside of each breast. Leaving a 1/2 inch border uncovered. Sprinkle pinch of flour over bottom border. Close breast. In a shallow dish combing flour, lemon rind, salt and pepper. In shallow bowl, whisk together egg, egg yolk and lemon juice. Place bread crumbs in another shallow dish. Coat breasts first with flour, then egg mixture, then with bread crumbs to coat all over (these can be refrigerated to this point, if preparing ahead of time). In nonstick pan, brown chicken in 2 batches with remaining oil over medium heat for 3 minutes per side. Then place on cookie sheet at 400'F for 15 minutes.
