1/2 lb. Colby Jack or sharp cheddar cheese, shredded
2 c. macaroni, uncooked
3/4 tsp. salt
1 tbsp. butter
1/2 tsp. salt
Dash pepper
2-3 tsp. onion, grated
2 c. milk

Directions:
Directions:
Preheat oven to 400. Cook macaroni in 2 qt. boiling water and 3/4 tsp. salt until "a little on the chewy side". Drain well and place in a greased casserole dish. Melt 4 tbsp. butter in the top of a double boiler; add grated onion. Blend in flour, 1/2 tsp. salt, pepper, and milk, stirring constantly until smooth. Add 3/4 of cheese; stir to melt. Pour sauce over macaroni; stir to coat macaroni. Sprinkle the rest of the cheese over top. Bake for 25-30 minutes.
