2 lb boneless chicken
1/4 Cup olive oil
1 medium onion, chopped
1 1/2 Cup uncooked rice
3 Cup Chicken broth
2 T. Paprika
2 T. Salt
1/2 tsp pepper
1/4 tsp cayenne pepper
1/8 tsp saffron
2 Cup Shrimp
1 lb fish fillet cubed
1 package frozen peas
1 jar pimientos. drained
4 medium tomatoes

Directions:
Directions:
Brown chicken in oil. Remove. Saute onions and tomatoes, stir in rice, broth and next 5 ingredients. Add Chicken, Cover tightly, simmer for 20 minutes. Gently stir in shrimp, fish , peas. Cover, Simmer 15 minutes longer. Stir in pimientos.

Any seafood or meat may be added. David always makes this for Cinco De Mayo at the Lester Raymer Red Barn Studio and has told not to forget to come. Without any meat is very good as well.
