Salad:
3 cups broccoli florets
2 oz. (1/2 cup) shredded Cheddar Cheese (low-fat can be used)
1/4 cup shredded Cheddar Cheese (reserve)
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup chopped red onion
1 medium-size red apple, sliced thin and in bite-size pieces

Dressing:
1/2 cup mayonnaise (low-fat or non-fat can be used)
2 Tbs, sugar
2 tsp. lemon juice
6-8 slices of crispy-cooked bacon, crumbled or broken into small pieces

In a large bowl, combine all salad ingredients, except 1/4 cup cheese. In small bowl, combine all dresswing ingredients, mix well. Pour the dressing over salad; toss to combine. Just before swerving sprinkle top with extra 1/4 cup cheese.
