1/2 lb. elbow macaroni (cooked according to package directions and rinsed with cold water) 1 c. cubed cheddar cheese 3/4 c. sliced gherkins 1/4 or 1/2 c. minced onion 1 pkg. (10 oz.) frozen peas (cooked and drained) 3 or 4 hard cooked eggs, cut up 1/2 or 1 c. chopped celery 1/2 or 1 c. grated carrots 1/2 c. or more mayonnaise Pimento and parsley for color Salt and pepper to taste
Mix all ingredients well. Garnish with paprika if desired. Serve chilled.
