Pineapple Mojito Recipe

4 mint sprigs
2 t. superfine sugar
2 T. fresh lime juice
2 oz. pineapple juice
1.5 oz. light rum
Splash of club soda

Directions:
Directions:
Remove mint leaves from their stems and place them in a coctail shaker. Add sugar. Use a pestle or end of a wooden spoon to lightly mash the mint and sugar together. Add lime juice, run, and a cup of ice cubes (crushed is even yummier). Cover and shake well. Strain mint and pour into a tall class. Top with club soda.

I love mojitos! I thought I would put this recipe in for Debbie to always remember New Year's 2005! This one is even better though because it has the sweetness of pineapple!
