2/3 c. cornflake crumbs
1 1/2 T. brown sugar
2 t. cinnamon
2 t. grated orange peel(if using dry orange peel, use same amount)
1/2 c. buttermilk
3 lbs. chicken pieces
oil

Directions:
Directions:
Preheat oven to 400F.
In a blender combine all ingredients except chicken and oil. Process until blended. Pour out onto wax paper or a paper plate.
Dip chicken pieces into buttermilk and then roll in crumb mixture. Place onto a greased baking pan. Bake for 30-40 minutes depending on how big your chicken pieces are. This recipe works well with skinless chicken pieces.
