6 medium Idaho (bakers) potatoes
1/4 cup butter
2 cups shredded Cheddar cheese
2 cups sour cream
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Cook potatoes in jackets in boiling water until they just start to soften. Peel and cool. Grate potatoes into a large bowl. Melt butter and saute onion; add cheese over low heat until cheese melts. Remove from heat and add sour cream, salt (Lawry's) and pepper. Pour over potatoes and stir gently. Put in a 2 quart casserole, dot with butter, add more grated cheese and sprinkle with paprika. Bake at 350 for one hour uncovered.

This is my revision from the Fargo Episcopal cookbook. . . leaving out the things I knew kids didn't like (green pepper and pimento!) It was the standard potato casserole I used for parties and family.
