1 Lb. Mushrooms, Chopped
2 Spring Onions, Chopped including green
3 Oz. Butter
2 Pints chicken or vegetable stock
1 1/4 Cup Milk
2 Oz Flour
1/2 pint cream
2 eggs
salt and pepper to taste
Lemon peel

Directions:
Directions:
Wash and chop mushrooms and onion. Melt butter, add mushrooms and onions, simmer for 10 minutes. Add flour blend into the mushrooms making a roux. Slowly add stock and bring to a boil. Lower heat, simmer 30 minutes, then add milk. Puree mix in blender, return to pan. Mix eggs with cream, add to pan and bring to boil,. Add pepper, salt and lemon peel, serve hot.
