Cookie Mix:
1 Tablespoon of butter
1 cup of flour
1 Tablespoon of sugar
3 teaspoons of baking powder
1 teaspoon of salt
of 3 well beaten eggs
1 cup of crushed pineapple (well drained)

Topping Mix:
1 cup of sugar
1 Tablespoon of sugar
2 cups of shredded coconut
The other half of the 3 well beaten eggs

Directions:
Directions:
Cream together the butter and sugar. Add flour, baking powder and salt. Mix until crumbly. Add of three well beaten eggs. Spread the mixture into an 8 square pan. Cover mixture with the well drained crushed pineapple. Spread the topping mix over the pineapple.
Bake at 350 degrees for 30 to 35 minutes. Cut into squares. (Freezes well.)
Yield: 2 dozen.
