1 c. dried orzo pasta
2 tbsp. butter
1 tsp. garlic, minced
4 c. fresh kale, chopped
2 c. fresh corn or frozen corn, thawed
2/3 c. heavy cream or milk
1/4 c. shredded parmesan cheese
2 tsp. lemon juice
salt and pepper to taste

Directions:

Cook pasta until done and drain. Set aside. In skillet, saute garlic in butter for 1 minute. Add kale and corn. Cook for 3 minutes, stirring frequently. Stir in heavy cream or milk, cheese, and lemon juice. Add orzo, salt, and pepper. Simmer for 1-2 minutes until hot.
