2 lb. small red potatoes, quartered
2 14 oz. cans artichoke hearts, drained and halved
2 T. fresh thyme or 2 tsp. dried
1 T. olive oil
1/2 tsp. salt, kosher preferred
1/2 tsp. black pepper
1/2 c. feta cheese, crumbled

Preheat oven 425
Coat 9 x 13" pan with cooking spray. Combine all ingredients, except feta, in pan. Cook 40 minutes or until tender. Add cheese and toss gently.
