Cinnamon-Apple Salad Recipe

6 Winesap apples, cored, peeled, cut in half
4 c. water
1/2 c. sugar
1 stick cinnamon, 3 inches long or 1/2 cup cinnamon "Red Hots" candies
6- 8 drops red food coloring (if using "Red Hots" candy, omit food coloring)
2 (3oz.) packages cream cheese, softened
1/2 c. chopped pecans
1/4 c. sour cream
1 T. lemon juice

In a large saucepan, mix water, sugar and chosen cinnamon; Bring to a boil and simmer 10 minutes. Add the prepared apples and continue simmering, basting apples frequently so they absorb color and flavor. Simmer 10-15 minutes or until apples are cooked through but still retain their shape. Let cool in the syrup; remove and chill. Reserve syrup.
Mix cream cheese, 1/4 c. chopped pecans, sour cream and lemon juice until well blended. Roll into 12 small balls and into reserved 1/4 c. chopped nuts.
Place a ball of cheese in the center of each apple. Reduce syrup over heat until about 3/4 c. remains. Cool. Spoon 1 T. over each apple half. Serve on lettuce leaf.

I always use the cinnamon candies. It takes about three of the 2 oz. bottles. This salad is a great garnish around a pork roast. Nice accompaniment to pork or chicken.
