1 1/2 c. sugar
1/4 c. cornstarch
1/4 c. flour
2 c. boiling water
4 eggs, separated
grated rind of 2 lemons
dash of salt
1/2 c. fresh lemon juice
2 T. butter
1/2 c. sugar for meringue

Directions:
Directions:
Mix sugar, cornstarch, and flour. Add boiling water gradually, stirring constantly and cook over direct heat until thickened. Beat egg yolks slightly and stir a little of the hot mixture into them. Then add yolks, lemon rind, salt, lemon juice and butter to the thickened filling, stirring constantly. Cook over low heat until filling is clear yellow and thick. Cool slightly and pour into baked shell.
Meringue: Beat egg whites until stiff and gradually beat in the 1/2 c. sugar. Put on top of pie. Brown meringue for 15 minutes in a 350 oven.
