1/4 lb. bacon or ham
1/4-1/2 cup olive oil
2 cups finely chopped yellow onion
2 carrots, peeled and finely chopped
1 cup chopped celery
3 large garlic cloves, peeled and chopped
7 cups chicken stock
1 tsp. dried thyme
2 bay leaves
1/2 cup brown lentils

Directions:
Directions:
If using bacon, cube finely and cook until crisp; set aside. If using ham, cube finely; no need to cook. Add oil to soup pot. Add onions, celery, carrots and garlic and saute over low heat, covered, until tender and golden, about 25 minutes. Add chicken stock, thyme, bay leaves, a grinding of fresh black pepper, and lentils. Bring to boil, reduce heat, and cover. Simmer until lentils are very tender, about 40 minutes. Discard bay leaves and puree half of soup in a food processor. Return pureed soup to pot. Stir in reserved bacon or ham and simmer briefly before serving.
