"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
4 ripe bananas 2 eggs, well beaten 2 cups flour 3/4 cup sugar 1 tsp. salt 1 tsp. baking soda 2 tbsp. vanilla
Preheat the oven to 350º. Grease a loaf pan. Mix the bananas and eggs together in a large bowl. Stir in the flour, sugar, salt, and baking soda. Put the batter in the pan and bake for 1 hour. Remove from the pan to a rack.
I make this for my kids all the time. It is their favorite. You can also add walnuts or chocolate chips if you want.
