1 1/2 C. diced cooked chicken
1 1/2C. cooked rice
1 C. chopped celery
1 (10 3/4 oz.) can cream of chicken soup, undiluted
3 tsp. finely chopped onion
1/2 tsp. salt
1/2 tsp. black pepper
1 T. lemon juice
3/4 C. mayonnaise
1/4 C. water
3 hard-cooked eggs, sliced
1 small can mushrooms
1 C. sliced water chestnuts
2 C. coarsely crumbled potato chips

Directions:
Directions:
Combine first 10 ingredients in large bowl. Combine mayonnaise and water; stir with a wire whisk until smooth. Add mayo mixture to chicken mixture. Gently fold in egg slices. Add mushrooms and chestnuts. Spoon mixture into a greased 11x7 baking dish; top with potato chips. Bake uncovered @ 400 for 15 minutes or until bubbling.
