6 ears of corn blanched and cut off cob
2 tomatoes
1 medium onion, chopped
3 T. whole cilantro leaves
2 T. lime juice, fresh
1/3 C. olive oil
1 tsp. rice wine vinegar

Directions:
Directions:
Salt and pepper, mix all ingredients, season to taste.
Garnish with lime wedges and cilantro leaves. Chill

(frozen corn may also be used.)
