1 qt. large firm, ripe strawberries
3 tbsp. cornstarch
1/2 cup water
1 tbsp. lemon juice
1/8 tsp. salt
1 cup sugar
1 baked 9" pie shell
1 cup heavy cream, whipped and flavored with 1/8 tsp. mace

Directions:
Directions:
Hull and wash berries. Drain. Divide berries into two parts, picking out best berries for one part. Reserve best berries.

In a saucepan, crush remaining berries with a fork. Combine the cornstarch, water and lemon juice to a smooth paste and stir in crushed berries.

Stir in salt and sugar. Cook over low heat, stirring constantly, for about 5 minutes or until mixture thickens and is clear. Cool.

Place the reserved berries in the pie shell and top with the cooked mixture, spreading evenly. Decorate with whipped cream.

Refrigerate until serving time. This can be made a day ahead of time and refrigerated but the whipped cream must not be added until just before serving.
