3 lb boneless pork roast
salt and pepper
sage
2 cloves garlic
butter
1 onion sliced in rings
1 carrot sliced
1 bay leaf
1/2 cup strong beef stock

Directions:
Directions:
Rub the roast with salt, pepper, and sage. Stud with slivers of one clove of garlic. Let sit for several hours at room temperature or in the refrigerator overnight. Dry the meat. Sear in a Dutch oven. Just until brown. Saute vegetables and other garlic clove in butter. Return meat, add bay leaf, cover and cook at 325 F about 2 hours or 30 minutes per pound. Baste the roast with butter several times during roasting. Remove the meat. Add stock and simmer several minutes. Serve stock over roast with rice.
