1 onion
1/4 cup oil
1 lb. frozen mixed vegetables (about 4 cups)
1/2 tsp. dried marjoram
Salt & pepper to taste
6 oz cheddar cheese (about 1 1/2 cups grated)
4 eggs
1 cup Bisquick

Heat over 350
Butter a 1 1/2 quart baking dish
Chop onion
Heat oil in large frying pan.
Add onion and cook until tender.
Add frozen vegetables & marjoram
3/4 tsp. salt & 1/2 tsp. pepper
Cook until tender.
In separate dish, beat eggs with 1/2 tsp. salt.
Transfer veggie mixture to a bowl, stir in Bisquick 1 cup of cheese and eggs until well combined. Transfer to baking dish sprinkle with remaining cheese. Bake until puffed & set about 25 minutes
