10 - 12 small red potatoes, cut into wedges
1 sweet or Vidalia onion, cut into wedges
1 Tbsp. olive oil
1 tsp. chopped dill weed
1 - 2 tsp. fresh parsley, chopped,
1 tsp. chives, chopped into small pieces
1 sprig rosemary, take off leaves and chop
1 tsp. chopped fresh basil
3/4 tsp. salt
1/2 tsp. freshly ground pepper

Directions:
Directions:
Heat oven to 400 F. Add oil to the bottom of a casserole dish. Arrange potatoes and onions in the dish. Sprinkle with all the herbs and seasonings. Mix. Bake for 35 - 40 min. or until potatoes are brown and tender. Mix thoroughly several times during cooking to prevent burning on the bottom.
