1 CAN Cream of Celery soup (or your choice of cream soup)
1 (8 oz.) Cheese Whiz
3/4 stick Margarine
1/2 C. thinly slice celery
1 1/2 C. instant cooking rice
1/2 C. finely chopped onion
1/2 C. SLICED MUSHROOMS

1-2 C. BROCCOLI FLORETS ONLY

Saute onions and celery in butter. In a 3 qt. saucepan, over lower heat; melt together soup, cheese whiz and margarine. Add celery, rice, onions, and mushrooms; set aside. Line bottom of 3 qt casserole with florets. Pour cheese sauce on top and bake at 350 for 40 minutes.

When I use only the florets in this dish, I slice the stalks very thin and bag them in the freezer and use for vegetable soup later. I also like to add leftover chicken or turkey to this recipe.
