3 eggs 1 3/4 C sugar 1 C vegetable oil 2 tsp. vanilla 3 C flour 1/4 tsp. baking powder 1 tsp. salt 1 tsp. soda 3 tsp. cinnamon 2 C grated unpeeled zucchini 1 C chopped nuts (Optional)
Spray loaf pans. Combine eggs, sugar, oil and vanilla. Beat thoroughly. Add dry ingredients and blend well. Stir in grated zucchini and nuts. Bake in 4 mini loaf pans or 2 average loaf pans at 350º for 1 hour.
