3 c. flour
2 c. sugar
1 tsp baking soda
1 tsp cinnamon
3/4 tsp salt
3 eggs
2 c. shredded carrots
1 c. vegetable oil
1 c (8oz) unsweetened crushed pineapple, drained
2 tsp vanilla
3/4 c. powdered sugar (optional)
1 - 1 1/2 tsp. milk (optional)

Directions:
Directions:
Mix flour, sugar, baking soda, cinnamon, and salt. In another bowl, beat eggs; add carrots, oil, pineapple, nuts and vanilla. Stir into dry ingredients until moistened. Spoon into 2 greased and floured 8" x 4" x 2" loaf pans.
Bake at 350 for 65-75 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes before removing to wire racks to cool. If desired, combine powdered sugar and milk and drizzle over loaves.
