2 c. flour 2 t. baking powder 2 t. cinnamon 1 t. soda 1/4 t. salt 4 eggs 1 can (15 oz.) pumpkin 1 2/3 c. sugar 1 c. oil 1/4 c. chopped pecans 1 recipe cream cheese frosting
Preheat oven to 350º. Stir dry ingredients together. Beat together eggs, pumpkin, sugar, and oil. Add flour mixture. Beat until well mixed. Stir in chopped pecans. Bake for 25-30 minutes. For the cream cheese frosting, beat together 3 oz. softened cream cheese and 1/4 c. softened butter. Add 1 t. vanilla and beat until fluffy. Gradually add 2 c. sifted powdered sugar and beat until smooth. After bars have cooled frost and serve.
