6 medium red potatoes
3-4 sliced green onions
2 garlic cloves
2 T. butter
3/4 c. milk
2 egg yolks
2 T. dried parsley flakes
1/4 tsp. pepper
1/4 tsp. nutmeg
1 lb. smoked sausage, sliced
1/2 c. Mozzarella cheese
2 T. grated Parmesan cheese
1 tsp. thyme

Directions:
Directions:
Cook potatoes in boiling salted water until tender. Drain & transfer to mixing bowl. Mash potatoes and add onions, garlic, butter, milk, egg yolks, pepper and nutmeg; beat until light & fluffy. Stir in parsley, sausage & cheeses. Spoon into a greased 2 qt. baking dish. Sprinkle w/ thyme.
Bake uncovered in a pre-heated 400 oven 35 min.
