2 -3 Lbs of Potato's (boiled till tender) You can boil in the skins after washing them. They peel easy after they are cooled

5 Eggs - Boiled & Peeled

3 Heaping T. Mayonnaise or Miracle Whip (you might need more)

1 Heaping T. of yellow mustard

2 T. Sweet pickle relish

Salt & Pepper to taste

1 T. Sugar

3 stalks of Celery - chopped (I use processor)

1 Large Onion - chopped ( I use processor)

Boil Potato's until tender, Peel and Cube. Boil eggs and peel. Cut in middle of eggs and take out the yellow & put the yolks all in a separate medium size bowl. Mash yolks with fork. Add Mayo, Mustard & relish to the yolks. This will make the sauce over the potato's. Chop the whites of the egg (you can use a processor or knife). Add all ingredients in a large bowl and mix well. Keep refrigerated until used. (always make sure you have more onions than celery) Celery takes over the taste if you add too much. The amount of the mayo & mustard might change with the number of potato's you use. Just don't make salad too liquidly add as much sauce as you like.

This is a great salad to take to a picnic. Just keep it on ice. Use a tupperware bowl with a lid to store.
