3 cups chopped onions
2 Tablespoon butter
4 cup diced potatoes (leave skins on)
1 cup heavy cream
Bacon bits or 8 slices of bacon cut up
3 T cornstarch plus 3/4 cup water
1 1/2 tsp salt
1/2 tsp pepper

Directions:
Directions:
Saute' onions in butter. Add potatoes and cover with water. Cover and let cook until tender. Use potato masher to mash taters slightly and add 1 cup heavy cream. Sprinkle with bacon bits. I use the precooked bacon and tear into small pieces. To thicken the soup, please use 3 T cornstarch and 3/4 c water, stir together and slowly add to heated soup. Bring to boil.
