8 - 10 flour tortillas
1 onion
1 can green chilis
1 can enchilada sauce (mild) - Pour over enchiladas
1 can rotellas Mexican tomatoes with Jalapeños
4 cooked chicken breasts shredded
1/2 tsp salt
3 cups shredded cheddar cheese

Directions:
Directions:
Boil chicken breasts and cool. Shred chicken and add all the ingredients except for enchilada sauce and 1 1/2 c cheese. Fill tortillas, roll and place seam side down in 9 X 13 pan sprayed with Pam. Pour remaining enchilada sauce over top and rest of grated cheese. Bate at 350º for 30 min. Serve with sour cream and Rice a Roni Mexican Rice
