5 LB. Potato's Peeled and cut in large cubes
1 Large Onion - Chopped small - I use processor.
4 Stalk of Celery small chop, I use processor
Water to just cover potato's in Kettle with lid
Salt & Pepper to taste
Celery Salt - Sprinkle over soup to taste
1/2 pound Velvetta Cheese cubed - or a little more
1/2 to 3/4 C. Milk
4 T. Butter

Directions:
Peel & cut up potato's and add to water right away so they will not turn brown. Cover with water just to the top of potato's. You don't want the soup too watery. Add Onions and Celery to potato's. Add salt, pepper & celery salt to soup. Boil at Medium until the potato's are tender, but not too soft. Turn down to low after everything is tender. Then add the cheese, milk and butter an stir till blended.Our family likes lots of cheese so you can add as much as you like. usually leave on stove to simmer for about 20 Minutes. I serve with cracker or French bread.
