1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic, minced
1 tbsp cooking oil
1 tsp chili powder
28 oz can tomatoes, undrained and cut up
3/4 cup uncooked long grain rice
4 oz can diced green chile peppers, undrained
Several dashes bottled hot pepper sauce
1/2 cup shredded cheddar cheese

Directions:
Directions:
In a large skillet cook onion, green pepper and garlic in hot oil, until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chili peppers, hot pepper sauce, 1 cup water, 1/4 tsp salt and pepper. Bring to a boil; reduce heat. Simmer, covered for about 20 minutes or until rice is tender and liquids are absorbed. Sprinkle cheese on top before serving
