2/3 c. sugar
1/2 c. shortening
2 pkg dry yeast (4 1/2 tsp.)
2 eggs
1 c. mashed potatoes
1 tsp. salt
1 1/2 c. warm water
7 1/2 c. flour

Directions:
Directions:
Cream together sugar and shortening. Dissolve yeast in arm water as directed on package. Beat eggs and add to sugar mixture. Beat in mashed potatoes and salt. Add yeast and water. Beat in 4 cups flour with mixer: then stir in 1 1/2 cups flour with spoon.
Sift 2 cups flour onto kneading board or waxed paper and knead into dough. Turn dough into well-greased bowl and cover. Let rise in warm place. Punch down. Make out any amount of rolls desired, then cover remainder of dough. Oil the top and refrigerate until ready to use.

Bake rolls at 400 for 15 - 25 minutes or until golden brown.
