1 stick of butter
1/2 c. flour
3 c. milk
1 lb. grated Swiss cheese (I use Gruyere)
1 lb. fresh mushrooms, sliced
1 c. fresh parsley
1 dozen eggs
1 pt. whipping cream

Directions:
Directions:
Make a white sauce out of the first 3 ingredients.
Saute mushrooms in a little white wine; drain completely. In large skillet melt the stick of butter. Beat the eggs with the whipping cream. Add to the skillet. Scramble the eggs but keep them wet by scrambling them on medium heat or a little lower.
In a 9" X13" pan layer eggs, parsley, cheese, and sauce. Cover with foil and refrigerator for 24 hours. Take out of refrigerator about 1/2 an hour before going into the oven. Heat until very warm; 350 degrees for 30 minutes.
