1 8 oz. pkg. broad noodles
2 10 oz. pkgs. chopped, defrosted spinach, drained
1/2 c. butter
1 onion
3 eggs, slightly beaten
1 c. sour cream

Directions:
Directions:
Cook noodles in salted water until barely tender and drain; mix noodles and spinach. Saute onion in butter until slightly browned. Fold in eggs; add sour cream and mix well. Add to noodles and spinach. Pour into a greased 6 cup ring mold. Place mold in pan of hot water in a 350º oven for 45 minutes. Unmold on a heated platter with steamed or sautéed mushrooms in the center.
Steamed mushrooms:
1 lb. fresh mushrooms, 2 T. butter; 1/4 tsp. salt
Wash mushrooms. Place in double boiler, dot with butter and salt. Steam 20 minutes. This way they will remain plump.

I add Lawry's seasoned salt to the noodle/spinach mixture. Also, the mushrooms could probably be microwaved. It's an old recipe!
